Webster County, KY Baked Squash

  • Mix 1 stick of (light) reduced fat melted butter, 1 teaspoon of salt, 1 teaspoon of pepper, and 1/4 teaspoon of garlic powder in a large mixing bowl . Next prepare the following ingredients and toss in the butter mixture at one time to obtain an even coating.


  • 5 very full cups of thinly sliced squash, 6 cups if you omit the white potatoes

  • 1 very full cup of thinly sliced white potatoes

  • 1 cup of finely chopped onion


  • Put one to two layers in a greased cookie pan that has sides. Cover with foil.


  • Bake at 350 degrees until tender, usually 45 - 60 minutes. After it is tender, bake 10 - 15 minutes more without foil cover to brown the squash, check it often to avoid drying it out.


  • This can be grilled wrapped in foil if you preferred grilling. Grill until it is tender, may not need as much time as baking.
